Breakfast for Dinner

My, oh my, our cupboards are bare!  We normally get groceries once a week, but never made it last weekend.  I mean, it’s not like we live in the country and only make it to town once a month.  I don’t know why I didn’t just go one night after work, but I kind of wanted to see what kinds of things we could concoct.  I don’t even want to tell you what I ate for lunch today!

I don’t know about you, but breakfast is my favorite meal of the day, especially if it’s big and full of protein and lasts me til the early afternoon.  Since today was such a great day, I thought, why not have breakfast for dinner?  So we did.  Pancakes and turkey bacon, and Mommy washed it down with a glass of Pinot Noir just for good measure.  Come on.. it’s my Friday!

Enough pancakes to feed a small army.  D accidentally flipped around the pancake mix to water proportions (yes, we used box mix) and ended up with a TON of batter!

I used cookie cutters to punch out some shapes for Ella.  I call them “Pancake Man” and “Mr. Star.”  She devoured both of her new friends before she really got to know them.

We all have full bellies and are kind of in a food coma right now, but it’s all gravy (or should I say syrup? ha ha).

So, are you wondering why it was such a great day?  Aside from my annual observation/evaluation with my principal going smashingly well, I got a wonderful phone call from an old friend.  He’ll be traveling through Denver this weekend on business, and wants to hang out with little old me for an evening.  I can’t wait–I think it’s been 15 years (really ?) since I saw him last.  Wow–that makes me feel old.

Anyway, I have a ton on my agenda this weekend, and have some great new DIY crafty ideas that I can’t wait to create and share with you.

  1. All these little vignettes can eventually be a book or turned into short stories. The humor makes them fun and visual for me.
